The Table Today

 

Gram's Vanilla Pound Cake

Prep Time: 5 mins     Cook Time: 55 mins      Total Time: 60 mins     Servings: 8-10

Ingredients:

1¾ cups sieved All Purpose flour

2 Tsp baking powder

¼ Tsp salt

¾ Cup softened butter

¾ Cup sugar

⅓ Cup Milk

⅓ Cup Coconut Milk

2 Large eggs (lightly beaten)

1½ Teaspoons Vanilla Extract

 

Pre-heat oven to 325°.

 

Step 1.

Mix baking powder and salt into sieved flour with a fork. Set aside.

 

Step 2.

Lightly beat 2 eggs. Set aside.

 

Step 3.

Place softened butter and sugar into your mixer or a large mixing bowl. Mix on medium speed until butter mixture is pale yellow, light and fluffy, (about 1-2 minutes).

 

Step 4.

Turn mixer to low speed and slowly add lightly beaten eggs. If mixture starts to split, add a spoonful of flour mixture andcontinue. Add vanilla, half the flour, and milk. Mix until flour is incorporated. Mix in coconut milk and turn mixer off.Gently fold in the last half of the flour.

 

Step 5.

Transfer the batter to a buttered loaf pan. (I also line my pan with parchment paper for easy release and removal).

 

Step 6.

Bake for 55 minutes.

 

7. Cool and remove from pan. Slice and serve.
